August is the month guests ask for white wine with everything. Our sommelier would like a word in favour of a cool glass of red.
Why Pinot, why now
Pinot Noir is light enough to drink in warm weather and bright enough to stand up to grilled food. Oregon versions tend to be fresher and less heavy than those from warmer regions.
How cold is cold enough
Twenty minutes in the fridge before serving is about right. You want the bottle cool to the touch, not cold. Too cold and the fruit disappears.
"A slightly chilled red on a warm evening is one of the simplest pleasures we know."
Our five picks
- A Willamette Valley village wine for weeknights
- A single-vineyard bottle with red cherry and spice
- A rosé of Pinot for the terrace at lunch
- A sparkling Pinot for the start of the evening
- An older vintage for anyone who wants to be surprised

The cellar under the dining room, kept at a steady thirteen degrees.
All five are on the list by the glass until the end of September. Ask for a taste before you choose.
